Course Description

Join us once again, as Gilbert DiSanto, Director of Sustainability Initiatives and Product Development, provides an educational presentation on the history and science of cheesemaking, helping to understand the cheese making and dairy products process of sing presses, molds, thermometers, aging mats, waxes and so much more to create the right texture and flavor of various cheeses.

Note: This is a presentation on the science and history of cheesemaking and not a tour. Miceli’s has discontinued tours of the facility as of January 2025.
