In the past 130 years, there have been dramatic changes in the way bread is made and consumed. Whether you like your bread white, sliced and wrapped; stone-ground and whole meal; or in baguette, bagel or brioche form, you’ll learn about the technological, social and economic changes that brought it to your local bakery or supermarket at a price you can afford.
